My little cowboy and I decided to get up early on Saturday morning and head to Farmer's Market. I love Farmer's Market! The vendors are so friendly and I love getting fresh vegetables for my family and for myself. I created a few new recipes for this weeks lunch and I wanted to share them with you.
Pasta is a hard craving for me to get rid of and it's my Italian heritage that leaves me craving some carbs every now and then. This week seems to be my week to crave carbs and with all the choices on the market now as far as whole wheat there's something for every carb craving. I like the thin angel hair whole wheat pasta and that's what I cooked up for my lunch today. I started with a zucchini and yellow squash with a little red onion and I sauteed it in a teenie tiny amount of sesame oil. I then added my cooked pasta ~ gave it a toss and added in shrimp. The end result is a great mix of fresh vegetables & a little bit of pasta ~ enough to give you the feeling of eating pasta but it really has more veggies and shrimp than pasta.

1 package House Foods Tofu Shirataki Fettuccine Shaped Noodle Substitute
1 wedge The Laughing Cow Light Creamy Swiss cheese
2 tsp. reduced-fat Parmesan-style grated topping
1 tsp. fat-free sour cream
Use a strainer to rinse and drain shirataki noodles well. Pat dry. In a microwave-safe bowl, microwave for 1 minute. Dry as thoroughly as possible, using paper towels. Cut noodles up a bit, using kitchen shears or a knife.
Add cheese wedge, grated topping, and sour cream, breaking the cheese wedge into pieces as you add it. Microwave for 1 minute.
Stir well and, if you like, season to taste with salt and pepper. Enjoy!
